At KU Dining, our mission is to make every guest happy through chef crafted food and excellent customer service, with an environmental consciousness.JOB SUMMARY:Is responsible for daily operations of a dining unit or department on KU campus. The Manager is the leader of guest services, food quality and safety, while ensuring that employees follow all aspects of department policies and procedures. The Manager ensures the unit is available to participate with large scale unit & departmental events, organizational committees and initiatives that promote KU Dining’s brand.SUPERVISON RECEIVED & GIVEN: Receives direct supervision from the Assistant Director. This position supervises full time and part time employees.IN THIS ROLE YOU’LL GET TO:
Achievement Focus:Collaborate with marketing department to produce customer experience and sales driven strategies with a result to drive traffic and brand.Actively work with Student Unions Activities and participates in events as needed.Analyze and measure business trends; develop and implement plans to maximize sales and meet or exceed goals and objectives.Know current KU Dining goals and initiatives and ensures every action is in pursuit of those objectives.
Change Management:Be responsible for operational creativity and financially viable inventory processes.Oversee training and job performance of all staff, creating a retention focused culture.
Cost Consciousness:Be responsible for collaboration and execution of annual budget - revenue, cost of sales, labor cost, & general expenses. Explain variances in addition to being solution driven to execute unit specific budgetary metrics.Create and maintain accurate records for product ordering, inventory, waste control and cash handling. Monitors, logs and plans for equipment maintenance and purchasing.Take initiative to minimize waste and excess inventory; conserves resources.Effectively use FSS to purchase, forecast, inventory and account for cost of goods and general expenses.
Customer Service:Uphold a customer service philosophy among all employees while adhering to company policy. Ensure all staff is operating with a positive customer focused attitude and compliant with all training.Act as an on-site liaison and maintains a positive professional relationship with the students, faculty and staff.Exhibit a consistent positive attitude and outlook that facilitates a welcoming atmosphere for our employees and guests.Be able to effectively manage difficult customer/client situations.
Judgment:Provide direction to your staff and receiving timely compliance with regards but not limited to KUMU policy, training, and disciplinary actions.Take responsibility for all employees’ activities.
Leadership:Inspire the trust of others while working with integrity and treating all with respect and positive communication.Keep commitments towards assignments while being a role model leader in KU Dining Services.Establish healthy communication channels with subordinates, peers and leadership through regularly scheduled meetings, feedback and on site coaching.YOU WILL ALSO:Serve on KU Dining Leadership Team and particip ates in short and long range planning for KU Dining in accordance with the strategic plan. Assist in ambassador responsilbities to facilitate KU Dining outreach and branding.Maintain all necessary paperwork pertaining to licensed concepts in accordance with specific company/concept policy.Ensure FMS procedures are adhered to, including proper recipe procedures as well as cooking and holding temperatures.Conduct regular inspections, ensures recording of temperature logs, to verify daily adherence and training of ServSafe guidelines.Liaison with health inspector on scheduled and unscheduled visits, and maintain detailed inspection reports.Ensure all products are accurately labeled with correct pricing, nutritional, and allergy information.Maintain effective relations with support functions of the organization.Other duties as assigned by Assistant Director/Director.REQUIRED KNOWLEDGE ABILITIES & SKILLS: Knowledge of or ability to learn materials and methods used in preparation, holding and serving of quality food in a dining area and the use and care of appropriate utensils and equipment.Knowledge of health, sanitary and safety standards and practices applied to food service.Ability to follow recipes and instructions.Ability to maintain a friendly disposition and dedication to serve the general public.Ability to perform above average physical requirements of food servic
